Superfood dessert: Blueberry kefir jello

What do you get when you combine three superfoods in one dessert? A gut healing way to end your meal or start your morning. Deliciously.

Who knew that this jiggly dessert from childhood was such a powerful health food? Commercial jello is packed with sugar, collagen from sickly cows and loads of chemicals, colorings and preservatives. No bueno.

But homemade jello is a whole different story. It’s one of the best things you can eat for skin, joint and intestinal support.

My homemade jello-dessert came out smooth, with a custard-like texture. It also packed the probiotic power of kefir, vitamin C-rich blueberries and lemon juice and the gut sealing power of grass-fed jello. I bought my jello here.

I’ve been giving my husband bone broth every morning to heal his leaky gut symptoms and a jello dessert every night. Both broth and gelatin have the power to remineralize the body and seal the gut lining.

So if broth is not your thing, try some jiggly goodness instead.

If you suffer from intestinal permeability (a much more common problem than people realize), jello is a natural “spackle” that strengthens the intestinal barrier and seals holes.

Ingredients

1 cup of fresh or frozen blueberries (you can use strawberries too)

3 tablespoons of unflavored grass-fed jello

2 tablespoon of fresh squeezed lemon (or lime) juice

3/4 cups of kefir (if you don’t have kefir you can use plain yogurt)

1 cup of hot water

Optional: for extra sweetness add 1 tablespoon of maple syrup or local raw honey

How to

Blend berries, kefir, sweetener and lemon juice and set aside

Heat water in a pan and slowly melt the gelatin into the water by incorporating a little bit at a time and whisking the water as you temper the jello to make sure it melts.

Wait for the jello water mixture to cool a bit (so it is not scalding) and add to blended berry mixture and stir well.

Pour your superfood dessert into a container of choice. A 9×9 pan can work well.

Let cool for a couple hours in the fridge until it sets. For a fancy twist you can cut the finished jello into cute shapes with a cookie cutter.

Now you can eat your dessert and heal your gut too. No guilt and lots of healing power. Enjoy.

And most importantly don’t let anyone tell you it’s incurable.
